Pleasure to meet you! I'm chef Colton Wagner the owner/founder of The Colorado Cache, LLC. I was born in the beautiful small town of Durango, Colorado. Durango, is a hidden gem located in the majestic San Juan mountain range. I am multi-generation Coloradoan who's culinary roots are deeply embedded into the state. Growing up I would spend weekends on our ranch making canned preserves and elk sausage with my family. This was the definition of "home-style" cooking.
Once I was old enough to work I needed a job, so I started washing dishes and doing prep at a well-known seafood/steakhouse downtown. After months of peeling potatoes and shucking thousands of oysters, I slowly worked my way up the kitchen ranks and my love for the culinary world began.
After high school, I moved to Beaver Creek Resort in the Vail Valley. For the next two years, I attended a culinary school. I was able to work on multiple restaurants concepts in a short period. I was learning classic French techniques one day and rolling pasta the next. I was cooking under some of the toughest and most prestigious chefs in mountains. Cooking was life. Period.
Next, it was time to head to the city. I was offered a sous chef position at a Gastro Pub in Cherry Creek, Denver. Here I was able to express my full view of culinary creativity. I took my experience going back to childhood and started to apply it to the fine-dining world. I was young and ambitious. We were awarded both Best New Restaurant and Best Charcuterie Menu in Denver in 2010.
In 2012 I moved to Boulder, CO, and fell in love. This is where I currently reside with my lovely wife and daughter. At the young age of 23, I was humbled to be offered my first executive chef position working for the famous farm-to-table concept, The Kitchen owned by Kimbal Musk. I spent the next 6 years running my own kitchen. During my tenure, The Kitchen Restaurant Group won multiple awards and was seen on everything from cooking shows to National magazines. I soon became the National Executive Chef and had the opportunity to travel the country and open restaurants.
I wanted more so I began to take my culinary research global. I spent time staging in Michelin starred restaurants in New York City. I traveled to Peru, Spain, and France to eat and study. These incredible places drove my passion and love for molecular gastronomy. I was able to explore the 1, 2, and 3 Michelin star world and ate street food when I ran out of money. These moments opened my eyes to the endless possibilities that can be created in the culinary world.
We have had the opportunity to cook all over the state of Colorado doing wedding dinners, cooking for local friends to some of the most famous headliners at Red Rocks Amphitheater. I'm excited to continue my culinary journey through The Colorado Cache, LLC.
